Easy & Healthy Homemade Granola

This is my absolute favorite granola recipe. My go to whenever I need to have some granola on hand, and especially during the month of Ramadan I make a big batch and keep it handy all month long. I am not kidding when I say that the ONLY suhoor I have during Ramadan, every single day is plain yogurt, fruit and lots of delicious granola. It gives me the right amount of fiber and energy and healthy fats needed to go about my day while fasting. So easy and so delicious, try it yourself and you'll be amazed with the results.
-3 cups of whole oats
-1/4 cup brown sugar
-1 tsp coarse salt
-1 1/2 cups any nuts of choice or a combination
-1/4 cup pumpkin seeds/sunflower seeds
-1/2 cup extra virgin olive oil
-1/2 cup pure maple syrup
-1/2 cup dried raisins or any dried fruits you like
-Pre-heat your oven to 150C
-In a large bowl, combine the oats,the brown sugar, nuts, seeds and salt.
-Pour over your liquids (olive oil + maple syrup) and mix well so everything is well coated.
-Place on a large baking sheet and try to push it so it's all in a single layer
-Bake in the oven for 40 mins, mixing it every 15 mins to make sure all sides are getting caramelized
-After 40 mins add in your dried raisins and continue baking for an additional 10 mins.
-After the 10 mins, take out of the oven and let it cool at room temperature.
Voila! How easy was that, and I guarantee your kitchen I going to smell AMAZING.
Use this granola to top your favorite yogurt and fruits, make a fruits crumble with or just snack on it as is it's that delicious! :)
